Lamb
- 1kg lamb mince 
- 10g chilli paste
- 30g crushed garlic
- 5g paprika
- 20g sumac
- 20ml lemon juice
- 200g crushed tomatoes
- 10g baharat (Lebanese 7 spice)
Pizza Topping
- 3 x hand stretched pizza bases
- 200g mozzarella cheese, grated
- 200g stringed Arabic haloumi
- Rocket leaves
- Olive oil
- Sumac
Serving Suggestion
- Chicory Salad
- Heat 50ml of oil in a wok or frying pan, over medium heat, add chilli paste, garlic, paprika, half the sumac and stir while cooking for 2 minutes. Add the lamb mince and stir until browned.
- Once mince is fully cooked, add lemon juice, followed by crushed tomato and Baharat. Cook for 5 minutes. Remove from wok or pan, season and set aside to cool.
- Spread lamb topping over bases, add mozzarella cheese and stringed Arabic haloumi cheese.
- Bake pizzas in pizza oven for 10 minutes or until golden.
- Top with rocket leaves, a drizzle of olive oil and sumac
- Serve with chicory salad.
